Chicken, Spinach & Cream Cheese Tortilla Wrap (2)

I’ve been on the hunt for a St. Patrick’s Day recipe that doesn’t require artificial food coloringChicken, Spinach & Cream Cheese Tortilla Wrap (3). After watching a few food documentaries {including Hungry for ChangeChicken, Spinach & Cream Cheese Tortilla Wrap (4), FoodmattersChicken, Spinach & Cream Cheese Tortilla Wrap (5), and Fat Sick & Nearly DeadChicken, Spinach & Cream Cheese Tortilla Wrap (6)} and learning about certain ingredients I’m trying to avoid I have almost entirely eliminated artificial food coloring. But what fun is St. Patrick’s Day without green food? With a little brainstorming and conversations with co-workers this brilliant idea was born! How about a spinach and chicken wrap with a yummy cream cheese spread on a spinach tortilla? Let me guess. I had you at cream cheese? I know – I love it too! But wait. There’s more. There’s a whole lot of goodness in that spread that I’ll get to in a moment. Let’s marvel for a moment at how festive this meal could be for your St. Patty’s Day lunch. Yes!

Need I say more? Mix a little spread, sprinkle some spinach, sprouts, and chicken, roll it up and you are on your way. A great quick and easy lunch idea that’s perfect for the whole family.

Mmm, wonderful idea for the green! I will definitely be trying this out and I will use the green tortillas for a breakfast burrito that day too or maybe a breakfast pizza….. Kids would probably be more receptive to the pizza for breakfast. :)
