I’ve been on the hunt for a St. Patrick’s Day recipe that doesn’t require artificial food coloring. After watching a few food documentaries {including Hungry for Change, Foodmatters, and Fat Sick & Nearly Dead} and learning about certain ingredients I’m trying to avoid I have almost entirely eliminated artificial food coloring. But what fun is St. Patrick’s Day without green food? With a little brainstorming and conversations with co-workers this brilliant idea was born! How about a spinach and chicken wrap with a yummy cream cheese spread on a spinach tortilla? Let me guess. I had you at cream cheese? I know – I love it too! But wait. There’s more. There’s a whole lot of goodness in that spread that I’ll get to in a moment. Let’s marvel for a moment at how festive this meal could be for your St. Patty’s Day lunch. Yes!
I’m focusing this month on recipes that take less than 30 minutes. This fits the bill. With a rotisserie chicken all the hard work is done for you. The cream cheesemixture is almost the star of the show featuring sour cream, green chilies, green onions and bacon bits! Need I say more? Mix a little spread, sprinkle some spinach, sprouts, and chicken, roll it up and you are on your way. A great quick and easy lunch idea that’s perfect for the whole family.

This Chicken, Spinach and Cream Cheese Tortilla Wrap is a delicious and easy lunch idea that is ready in no time!
Ingredients
- 3Mission Garden Spinach & Herb Tortillas
- 8oz.cream cheesesoftened
- 6oz.sour cream
- 14.5 oz. can chopped green chilies
- 2-3green onionschopped
- 1/2c.pre-cooked real bacon bits
- 2c.shredded rotisserie chicken
- 3c.fresh spinach
- 1c.alfalfa sprouts
Instructions
Combine cream cheese, sour cream, green chilies, green onions and bacon bits in a medium bowl.
Spread enough cream cheese mixture evenly over tortilla to cover completely.
Down the center of the tortilla, layer a handful of spinach followed by spouts and finished off with shredded chicken. Roll up wrap and slice in half.
Recipe Notes
You can cut the wraps in half, or if you like you can cut them into 1-inch slices and serve them as an appetizer style finger food. Both ways are great!
