Easy Chicken Lettuce Wraps
Some days just call for a dinner that is on the lighter more refreshing side. Lettuce wraps lighten up any main dish and can be filled with a variety of fresh ingredients.
With a few avocados and some chicken on hand, I threw together a mixture for some lettuce wraps that turned out to be nothing short of amazing. The blend of Southwestern spices gives this a wonderful burst of flavor.

Rotisserie Chicken Lettuce Wraps
The recipe is simple and only takes a few minutes. It is easily made by grilling up a chicken breast or using leftovers from a rotisserie chicken.
You could even pan-sear a chicken breast with just salt and pepper. While the chicken is cooking, throw the corn, black beans, and avocados together in a bowl.
The spice mixture is super simple and uses pantry staples. Mix the spices and a bit of lime juice. The fresh lime juice brightens up all the flavors.
Mexican Lettuce Wraps
Combine chicken corn, black beans, avocado, onion, chili powder, cumin, and garlic in a medium bowl. Stir in lemon juice. Toss with chicken.
Separate the lettuce leaves, wash, and pat dry. Spoon the chicken mixture into the lettuce leaves and serve.

Ingredients
- 3 cups cooked chicken chopped into ½-inch pieces
- 15 ounces canned corn drained
- 15 ounces canned black beans drained and rinsed well
- 2 avocados diced into ½-inch pieces
- ½ small yellow onion finely chopped
- ¼ cup fresh cilantro chopped
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon granulated garlic or garlic powder
- ½ teaspoon kosher salt adjust to taste
- 2-3 tablespoons fresh lime juice about 2 limes worth, adjust to taste
- 1 small head of lettuce
- OPTIONAL: sour cream and hot sauce, for serving
Instructions
Combine the chicken, corn, black beans, avocado, cilantro, onion, chili powder, cumin, garlic, and salt in a medium bowl. Drizzle with fresh lime juice. Toss to combine.
Separate the lettuce leaves, wash, and pat dry. Spoon the chicken mixture into the lettuce leaves and serve.
Notes
Rotisserie chicken, grilled chicken, shredded chicken, and pretty much any leftover chicken will work beautifully in these easy lettuce wraps.
